Apple samosas
Recipe by Jérôme Foligné at L'AUBERGE DES TILLEULS restaurant (35)
Ingredients:
- 150g flour + 15g Linette
- 50g hazelnut powder
- 2 eggs
- 50g melted butter
- 100g sugar
- 1 bag of filo pastry
- 1 apple
- 1 jar of apple sauce
- 'Golden' Linseed Seeds
Preparation :
- Blanch the eggs and the sugar, add the flax flour and the hazelnut powder, mix well. Finish by adding butter
- Dice and caramelize the apple then add the apple sauce and the other mixture
- Make the samosas in to triangles using strips of filo pasty. Glaze the top with melted butter and sprinkle with the linseed seeds
- Pre heat the oven to 200C. Place the samosas on a baking sheet and bake for 15-20 minutes until crisp golden brown
- Serve with either English cream or low-fat yogurt
