Galette des rois

Have you thought of Linette in your Galette des Rosi ? Here's a simple recipe to show you how:

Ingredients: 

  • 2 puff pastry sheets
  • 90g ground almond
  • 10g Linette
  • 75g sugar
  • 50g soft butter
  • 2 tbsp apricot jam
  • 1 egg yolk
  • 2 tbsp cognac or dark rum

Instructions:

  • Mix all the ingredients to make the frangipane and arrange it between the two puff pastry sheets
  • Glue the two puff pastries around the edges and pierce the top with small holes to prevent it swelling to much
  • Glaze the top of the pastry with the egg yolk to brown
  • Bake for 30-40 minutes at 210oC  then ..... enjoy ! 

 

 

 

Cookies

Ingredients:

  • 150g butter
  • 80g light brown muscovado sugar
  • 1 large egg
  • 200g plain flour
  • 50g of Linette
  • 1 cup of oatmeal
  • ¼ tsp salt
  • ½ tsp bicarbonate of soda
  • ½ cup of raisins
  • ½ chocolate chips

Preparation:

  • Mix the butter and sugar until creamy, beat in the eggs
  • Sieve in the flour, Linette, bicarbonate of soda and salt
  • Add in the chocolate chips, raisins and oatmeal 
  • Use a teaspoon to make small balls and space them well apart on a baking tray
  • Let them harden in the fridge 
  • Bake for 5 minutes at 180C, until they are light brown on the edges and still slightly soft in the centre
  • Leave on the tray for a couple of minutes to set before lifting them on to a cooling rack

Crepes

Ingredients: 

  • 500g flour
  • 50g Linette
  • 5 medium eggs
  • 800ml milk
  • 200ml water
  • 1 shot of rum (optional extra)

Preparation:

  • Add flour and Linette to a bowl, make a hole in the centre to break the eggs
  • Whisk together whist gradually adding the milk and water
  • Add the rum
  • Make sure their are no lumps in the mixture
  • Heat a medium sized frying pan over a medium heat, grease the pan with either oil or butter
  • Using a serving spoon or ladle spoon in about three spoonful's of crêpe batter in to the hot pan, tilting the pan to ensure even coverage
  • Cook on both sides for 1-2 minutes or until golden brown

Did you know ?

Putting water in the pancake batter makes them lighter and crisp !

Little trick 

You can replace the rum with calvados or orange blossom water

 

Brioche

Ingredients:

  • 300g flour
  • 170g butter
  • 30g of Linette
  • 15g yeast
  • 1 pinch of salt
  • 50g sugar
  • 10cl milk (lukewarm)
  • 3 medium eggs

Preparation: 

  • Preheat oven to 180oC
  • Mix flour and Linette then add salt and sugar
  • Mix the yeast and warm milk
  • Gradually add flour, yeast/milk mixture, butter and eggs and mix until you get a smooth paste
  • Cover the mixture with cling film and leave for about 1hr in a warm spot
  • Knead the dough carefully to obtain a light brioche (about 15mins)
  • Let the dough sit again until it doubles in size
  • Put the dough in a buttered dish and put in the oven. After 30 minutes of cooking cover in a sheet of tin foil and cook for a further 15mins.
