Chocolate Raisin Cookies

Ingredients:
- 150g butter
- 80g light brown muscovado sugar
- 1 large egg
- 200g plain flour
- 50g of Linette
- 1 cup of oatmeal
- ¼ tsp salt
- ½ tsp bicarbonate of soda
- ½ cup of raisins
- ½ chocolate chips
Preparation:
- Mix the butter and sugar until creamy, beat in the eggs
- Sieve in the flour, Linette, bicarbonate of soda and salt
- Add in the chocolate chips, raisins and oatmeal
- Use a teaspoon to make small balls and space them well apart on a baking tray
- Let them harden in the fridge
- Bake for 5 minutes at 180C, until they are light brown on the edges and still slightly soft in the centre
- Leave on the tray for a couple of minutes to set before lifting them on to a cooling rack
