Galette des Rosi

Have you thought of Linette in your Galette des Rosi ? Here's a simple recipe to show you how:
Ingredients:
- 2 puff pastry sheets
- 90g ground almond
- 10g Linette
- 75g sugar
- 50g soft butter
- 2 tbsp apricot jam
- 1 egg yolk
- 2 tbsp cognac or dark rum
Instructions:
- Mix all the ingredients to make the frangipane and arrange it between the two puff pastry sheets
- Glue the two puff pastries around the edges and pierce the top with small holes to prevent it swelling to much
- Glaze the top of the pastry with the egg yolk to brown
- Bake for 30-40 minutes at 210oC then ..... enjoy !
