Sparking goats cheese with peppery nougat

Recipe from White Horse Inn Châteaugiron (35)

Ingredients:

Sparkling goats cheese:

  • ½ fresh goats cheese
  • 10cl of cream + 5g Linette®
  • 3cl of milk
  • pinch of salt and freshly ground pepper

Peppermint Nougatine:

  • 40g sugar
  • 4cl cider vinegar
  • 25g of hazelnuts
  • 4/5 grains of crushed black pepper
  • 1 tbsp of oil

 

Preparation :

For peppery nougatine:

  • Crush the hazelnuts
  • Heat a skillet (without adding fat), place and lightly grill the hazelnuts stirring regularly.
  • Combine the sugar and apple cider vinegar in a saucepan. Bring to a boil until light caramel colour. Adding the pepper and crushed roasted hazelnuts.
  • Pour on lightly oiled anti-adhesive plate. Cool completely, the nougatine will harden. Peel the nougatine off the plate and crush. Put aside

For the sparking goats cheese:

  • Mix the fresh goats cheese with the milk.
  • Whip cream vigorously, add the goats cheese and whip again to obtain a creamy texture. Season with the salt & pepper.
  • Arrange the sparking goats cheese and sprinkle with nougatine. Serve fresh !
